Boondi ludoo ( Pakistani sweets)

   Red & Yellow "Boondi Luddo" by Asma Aziz




-Ingredients 
[1]-2 cups basan
[2]-1/2 cup suji *( semolina)
[3]- food color 1/4 tsp red food color powder , & 1/4 tsp yellow food color powder. 
[4]-2 tablespoon asli ghee *( clarified  butter)
[5]-2 cups oil for frying 
[6]-2 cups  sugar 
[7]-1/2 cup water  for syrup 
[8]-4Table spoon Rosewater
[9]-1/2 Finely ground cardamom
[10]-2 tablespoon  slice Almonds
[11]-silver leaf for decoration
(12)- 2 tablespoon homemade plain khoya 

-For making Boondi you need "Jhara " or kufgeer which has a good amount of holes .
Procedure :-
[ ] Make a smooth paste of basan , soji with the help of water, consistency should be runny. No lums add 1/2 teaspoon of asli ghee in it . Divide it  into 2 equal portion in different bowl. 
[ ] In one bowl add 1/4 tsp red food color powder 
[ ] In 2nd bowl add 1/4 yellow food color powder .
[ ] Syrup - In a pan 2 cups of sugar with 1 1/2 cup or water. 
[ ] Let it cook until it's become 2 thread syrup. Add 2 table spoon of lemon juice to prevent crystallization , Then Lower the flame . Add 4 tablespoon of rose water.
[ ] Now take a wok Add oil 
[ ] Let it hot then turn heat to medium .
[ ] Take a kafgeer keep it on wok  & start pouring batter slowly 
[ ] Keep kafgeer hitting with spoon or something. 
[ ] The batter should go like a drops in oil . 
[ ] Fry the Boondis  quickly. 
[ ] After frying keep them in a colander with paper towel 
[ ] Do all Boondis same procedure. 
[ ] After finish frying put it in warm sugar syrup. 
[ ] Let all Boondis absorbed syrup .then take it out in a try let it cool 
[ ] Add cardamom powder 
[ ] Add almonds 
Add khoya  (I made at home with ricotta cheese  )
[ ] Next with the help of Clearfield butter make a Boondis Luddo 
[ ] After finishing all Luddo's 
[ ] Let it set for 2 to 3 hours. 
[ ] Then apply your silver leaf 
[ ] I  added rose petals for fragrance & red color. 
[ ] Enjoy
